All you need are some vegetables, water, and a stove.

Ingredients

1 onion

2 carrots

1 leek

1 celery stalk

1/2 head of cabbage

A few cloves of garlic

2 bay leaves

1 teaspoon of thyme

1/4 teaspoon of black peppercorns

Salt to taste

Instructions

Chop the vegetables into small pieces. Add the vegetables to a pot along with 8 cups of water. Bring to a boil then reduce the heat to medium-low. Add the bay leaves, thyme, peppercorns, and salt. Cover and simmer for 2 hours.

Strain the mixture through a sieve or cheesecloth. Add more water to the mixture if it’s too thick. The broth will keep for up to week in the refrigerator or can be frozen in an ice cube tray.

To use in soups, add 2 tablespoons of vegetable broth for every cup of water when cooking rice or veggies. For thicker soups
