1/2 teaspoon baking powder
1/4 teaspoon baking soda
pinch of salt
8 ounces semisweet chocolate, chopped
6 tablespoons (3/4 stick) unsalted butter, at room temperature
2 cups granulated sugar
3 large eggs, beaten until light and frothy
2 cups well-shaken buttermilk
1 cup canned mangoes in juice, drained and finely chopped 1 tablespoon honey or agave nectar Directions: Preheat oven to 350 degrees F (175 degrees C). Butter and flour one 9-inch round cake pan; set aside. In a medium bowl or the bowl of a stand mixer fitted with the paddle attachment, combine 2 tablespoons of the flour, the baking powder, and the baking soda. Stir in the salt. Set aside. In a large bowl or the bowl of a stand mixer fitted with the whisk attachment, cream together 8 ounces of the semisweet chocolate and 6 tablespoons (3/4 stick) of butter until light and fluffy. Add 2 cups granulated sugar to the chocolate mixture and mix until combined. Add 3 large eggs to the chocolate mixture one at a time
