Annatto seeds are obtained from the achiote or bixa tree, and they’re typically used as a food coloring. The bright orange color of annatto comes from small red lacquer balls that are found within the pepper-like pods where annatto seeds grow. These Lacquer Balls contain pigments which produce yellowish/orange colors in any heated oil or fat base.
