The best commercial cooking equipment is the equipment that fits your menu and peak workload. A large oven is not automatically more useful than a smaller model with the right process and recovery performance. Define what your team cooks, in which quantities and over what service period.
Wigmore Trading welcomes sourcing enquiries for commercial ovens, cooking ranges, induction equipment and bakery production items. Send the application, capacity, site services and destination. Availability, technical suitability and installation scope require confirmation for the specific offer.
Choose equipment by cooking process
List baking, roasting, frying, steaming, boiling and other required processes. Explain whether work is made to order or batch-produced. Provide tray or pan dimensions, expected output and the space available around the unit.
Ask your chef and technical team to review the proposed configuration. Compare commercial duty, cleaning access, controls and service requirements. A product labelled industrial on a listing still needs evidence that it suits your use.
Gas ranges and induction cookers
For gas equipment, identify the intended fuel and have the site supply, ventilation and safety requirements assessed professionally. For induction, confirm compatible cookware and the available electrical capacity. Do not select solely on the number of burners or advertised power.
Compare the complete operating plan: utility availability, control, maintenance, staff familiarity and backup arrangements. An energy-efficient claim should be supported by model-specific evidence and a realistic usage comparison.
Commercial ovens and bakery lines
Specify the product range, batch size, proofing and preparation needs, output during peak production and available floor space. A bread oven, pastry workflow and general restaurant oven may need different features.
Include mixers, preparation tables, trays, racks and other required supporting items in the schedule. Check how ingredients move through the process and how finished goods are cooled, held and packed. Avoid buying an oven that creates a bottleneck elsewhere.
Kitchen hoods and exhaust systems
Extraction should be designed for the actual appliances, cooking load and building. Have competent specialists review hood coverage, duct route, replacement air, discharge location, fire considerations and cleaning access. An off-the-shelf hood alone is not a complete ventilation system.
Coordinate the extraction design before finalising equipment positions. Confirm which party handles design, fabrication, installation, testing and ongoing cleaning. Do not assume those services are included in a cooker quotation.
Demonstrations and acceptance
Where practical, agree a test with representative food or a defined production scenario. Record the output, quality and operating conditions relevant to your purchase. A demonstration using a different model or a light workload may not represent your service.
Confirm guards, manuals, controls and operator training. Identify what must be corrected if a unit fails the agreed acceptance criteria.
Budget beyond the appliance price
Include delivery, unloading, building-services work, installation, commissioning and essential accessories. Ask for the actual warranty provider and spare-parts support. Check whether consumables or specialist technicians are available locally.
For a bakery or catering startup, phase purchases around the opening menu and realistic demand. Keep working capital for stock, utilities and replenishment instead of spending everything on unused capacity.
Assess capacity with a representative production trial
Where a demonstration is available, use a realistic menu or production batch. Record loading and unloading time, consistency, recovery between batches and the work needed for cleaning. A bakery’s proofing, baking and cooling stages should be balanced; increasing oven capacity alone may simply move the bottleneck.
For food warming and display equipment, specify whether the task is cooking, holding or presentation. These are different functions. Have the responsible food-safety team define the operating controls and monitoring needed for the actual menu.
Ask the supplier to identify supplied trays, racks, stands, controls and other accessories. Confirm spare-part availability and the maintenance tasks that require a trained technician. An itemised acceptance checklist makes it easier to check that the delivered package matches the approved specification and is ready for competent commissioning.
Prepare a cooking-equipment enquiry
Send the menu or product list, expected peak output, floor plan, utility information, preferred condition and opening date. Wigmore can assess sourcing and logistics scope and help identify the specifications needed for a comparable written offer.
