A commercial fridge or freezer must fit the food, service pattern and installation environment. Internal volume alone does not tell you how a unit performs when doors open repeatedly or a busy kitchen adds stock. Start with the storage and operating requirement.

Wigmore Trading can assess refrigeration sourcing enquiries for restaurants, hotels, caterers and other food businesses. Provide the application, quantity, required capacity, site details and destination. A qualified refrigeration professional should confirm technical selection and commissioning.

Match the unit to the storage task

Separate chilled storage, frozen storage, display, preparation and any rapid-cooling process. Explain the food types, pack formats, loading pattern and access frequency. Do not treat a display cabinet as automatically suitable for every back-of-house storage task.

Provide the operating range established in your food-safety plan and the monitoring required. Equipment selection should support that plan rather than set arbitrary limits based on a sales brochure.

Cabinets, counters and cold rooms

A freestanding cabinet may suit a small operation; an under-counter unit may support a preparation station; larger operations may need a properly designed cold room. Compare usable storage, access, cleanability and maintenance clearance.

For a cold room, provide room dimensions, stock and turnover information, door use, site conditions and installation constraints. It needs a design and site review, not just a price per square metre of panels.

Site conditions and utilities

Tell the supplier where the equipment will operate, including heat exposure, ventilation and available power. Have the electrical and refrigeration requirements reviewed by qualified technicians. Confirm drainage or condensate arrangements where relevant.

Plan how the business will respond to a power failure or equipment fault. A backup supply must be sized and integrated professionally. Do not assume every unit will restart or perform in the same way after an interruption.

Monitoring and acceptance

Agree the conditions under which the unit will be commissioned and tested. Record the model, settings, loading assumptions and monitoring equipment. A quick check of an empty cabinet is not the same as demonstrating performance in the intended operation.

Use appropriate temperature monitoring and documented response procedures. Staff should know whom to contact and how affected food is assessed by the responsible food-safety team. A displayed temperature alone is not a complete control system.

Energy and maintenance cost

Compare model-specific energy information using assumptions that fit your actual operation. The ENERGY STAR commercial-foodservice resources can help identify useful equipment-comparison questions, but overseas savings figures are not a Nigerian utility-cost quotation.

Ask about maintenance access, available technicians, parts and refrigerant support. Confirm warranty territory, exclusions and responsibility for a failed unit. Include cleaning and maintenance in the operating budget.

New, used and imported equipment

For used units, investigate condition, service history and import eligibility before purchase. Nigeria’s official prohibition information includes restrictions on used fridges/freezers and certain compressors. Do not buy overseas used stock first and assume it can be cleared later.

For new imports, identify the applicable standards and documentation route. A manufacturer label or foreign plug does not establish readiness for local installation.

Plan storage layout and receiving checks

List the types of food, delivery frequency and peak stock you expect to hold. Consider raw and prepared products, allergen controls, container sizes and the space needed for orderly storage and cleaning. A quoted cabinet volume does not directly describe usable capacity in your operation.

At delivery, check model details, physical condition and accessories against the purchase order. Have installation and commissioning completed by the appropriate professional before loading food. Agree what records will demonstrate acceptable performance under the intended operating conditions.

Plan a response to faults and interruptions, including who checks alarms, who contacts service and how food will be assessed under the business’s food-safety procedures. Monitoring is useful only when someone is responsible for reviewing results and acting. Include these responsibilities in staff handover rather than leaving them as an equipment-only decision.

Send a refrigeration brief

Provide the food and storage task, approved operating range, capacity, access pattern, location, utilities and required date. Wigmore can assess supply and delivery scope and request the information needed for a technical quotation.
